Basmati Rice in a Rice Cooker: The Ratio Nobody Tells You

Rice cookers were designed around Japanese short-grain rice. Basmati is close to its opposite: a long, dry, high-amylose grain that is supposed to come out separate rather than sticky. So the machine’s defaults are aimed at the wrong target.
Three things fix nearly every complaint:
- Know which cup the water lines mean. Cookers sold in the US normally come with two measuring cups — a 180 ml rice cup and a 240 ml US cup — and the graduated lines inside the pot refer only to the small one. Use the small cup with the lines, or ignore the lines and measure both rice and water yourself. Mixing the two is the most common cause of bad rice-cooker rice.
- Rinse, then soak 20–30 minutes. Rinsing stops the grains gluing together. Soaking is what makes them long.
- Start at 1 : 1.5 water unsoaked, 1 : 1.25 soaked — then adjust by a quarter cup on the next batch.
Get those right and a rice cooker makes very good basmati. Get them wrong and it makes a pot of paste, reliably, every time.
Searches for cooking basmati in a rice cooker are climbing sharply, and the reason is easy to guess: a lot of people bought the machine, followed the lines inside it, and got something that tasted right but looked wrong. Short. Broken. Claggy at the bottom.
The machine is not faulty. It is doing exactly what it was built to do, for a different grain.
Why the machine is aimed at the wrong rice
Rice is mostly starch, and the starch comes in two forms. Amylopectin is the one that gels and clings — it is why Japanese short-grain rice holds together well enough to pick up in a clump. Amylose is the one that keeps grains firm and separate, and basmati is high in it.
A Japanese-designed rice cooker is built to get the first result. Its default cycle, its water lines and its sushi setting are all tuned to produce a cohesive, glossy, slightly sticky grain. That is a triumph of engineering aimed at a target that is not yours.
Basmati is asking for the opposite: dry, long, individually separate grains, each one roughly doubled in length. The good news is that no machine has to be modified for this. It only has to be given the right water and the right button, and the rest is technique that would be true in a pan as well.
Which cup the water lines mean
Before any of the ratios below, this one, because it invalidates everything else.
A rice cooker’s water lines are not measured in US cups. They are measured in gō, the traditional Japanese rice measure of about 180 ml. A US measuring cup holds 240 ml — a third more.
Cookers sold in the US usually ship with both cups in the box, which takes most of the sting out of this. But the lines moulded inside the pot still only ever refer to the small one, and that is the bit worth knowing.
So if you measure two cups of rice with the US cup and then fill water to the line marked 2, you have put in a third more rice than the machine is expecting, with water for the smaller amount. The rice comes out underdone and chalky. Do it the other way round — the small cup for rice, water measured with a US cup — and you overshoot the water and get mush.
Pick one system and stay in it. Either:
- Use the cooker’s cup for rice and the pot’s water lines, and nothing else, or
- Ignore the lines completely and measure rice and water with the same US cup, using the ratios below.
The second is what this page assumes, because it is the one that transfers between machines and between recipes.
The ratio, honestly
There is no single correct number, and anyone who gives you one has not asked what rice you bought.

Two variables move it, and neither is printed on the bag in a way you can use:
Age. Good basmati is deliberately aged, often a year or more, because ageing dries the grain and improves both the aroma and the way it elongates. A drier grain drinks more water. This is why rice from an Indian grocer often needs noticeably more water than a supermarket own-brand.
Soaking. A soaked grain has already taken on water, so it needs less in the pot. That is the whole of the 1.5 versus 1.25 difference.
How to find your number in two batches: cook one cup at 1.5 unsoaked. If it is wet or clumped, go down a quarter cup. If it is firm in the centre, go up a quarter cup. Write it on the bag. Basmati from the same brand and sack behaves the same way every time, and once you know your number you never think about it again.
Rinse, soak, rest
Three steps, and each one does a specific job.
Rinse — three or four changes of cold water. Milling leaves loose starch clinging to the outside of every grain. In a pan you can drain that away. In a rice cooker there is nowhere for it to go, so it gelatinises and glues the grains together. Swirl gently with your fingers and pour off, until the water runs cloudy rather than milky.
Do not rinse until it runs clear. Over-washing scrubs the grains against each other and chips them, and chipped grains break during cooking and release even more starch. Cloudy is finished.
Soak — 20 to 30 minutes in cold water, then drain well. This is the step that produces the long grains basmati is famous for. Water works into the centre of the grain slowly; if it goes in only from the outside during cooking, the outside is done while the middle is still hard, and the grain splits instead of stretching. A soaked grain hydrates evenly and elongates.
Thirty minutes is plenty. Do not soak for hours — the grains soften, get fragile and break up in the pot.
Rest — 10 minutes after the cycle ends, lid closed. The machine will click to Keep Warm before the rice has finished. Steam is still redistributing inside the pot, and the bottom layer is wetter than the top. Ten minutes with the lid on evens it out. Open it immediately and you get a wet base and a dry surface.
Then fluff with a fork or the flat paddle, lifting from the edges inward. Never stir with a spoon — stirring crushes grains and smears starch, which is exactly what all the rinsing was for.
Which button
Long Grain White, if your cooker has it. That setting lengthens the soak phase and eases off the final high heat, which is precisely what basmati wants.
Plain White Rice is the fallback, and it is perfectly good.
Avoid Sushi and Short Grain. They are engineered to make rice stickier. That is a feature, and it is the wrong feature.
Avoid Quick or Fast modes. A fuzzy logic cooker spends the first part of its cycle holding the rice below boiling to hydrate it evenly. Quick mode skips that. Since you have already soaked the rice, the loss is smaller than it would otherwise be, but the result is still less even.
If your cooker is a simple one-button machine with no menu at all, you have lost nothing. Those cookers heat until the water is gone and then switch off. That is a blunt method, and it happens to suit basmati well, because there is no programme trying to steer the grain towards sticky. Cheap does not mean wrong here.
When it still goes wrong

The one thing a rice cooker cannot do
A lot of Indian households do not cook rice by absorption at all. They boil it in a large pan of excess water like pasta, test a grain between finger and thumb, and drain it — then let it steam dry for a few minutes off the heat.
That method produces the most separate grains of any, because the loose starch is poured down the sink instead of staying in the pot. It is also completely forgiving about ratios, since the extra water leaves.
A rice cooker cannot drain. Everything you put in stays in. That is the real trade, and it is worth naming plainly: the machine gives you consistency, a lid you can walk away from, no boiling over, no catching, and rice that stays good on Keep Warm for hours. What it costs you is the drain.
For most weeknights that is a good trade. For a wedding-sized pot of pulao it is not, and no machine changes that. Both stovetop methods are set out here — the draining one, and the absorption one that lets you bloom whole spices in the same pan first.
Making it taste of something
Plain rice is a plate, and a plate is allowed to be plain. But two small additions cost nothing and change the pot.
Salt, added before cooking. Half a teaspoon per cup of rice. Rice cannot be seasoned afterwards in any meaningful way — the salt sits on the outside.
A teaspoon of ghee or oil, stirred in before the lid goes on. It coats the grains and helps them stay separate, and ghee in particular gives basmati a rounder smell that people recognise without being able to name.
And if you want jeera rice, which is the most useful rice in Indian home cooking, it is barely more work. Warm a spoonful of ghee in a small pan, add a teaspoon of cumin seed, and the moment it darkens and smells nutty — about thirty seconds, no longer — tip the whole thing into the rice cooker with the soaked rice and water, and cook as normal.
For a pulao, add whole spices to that same ghee before the rice: a small piece of cinnamon, two or three green cardamom pods, a couple of cloves, a bay leaf. Whole, not ground — ground spice in rice turns the whole pot a muddy colour and tastes dusty. Whole spices perfume the steam and get pushed to the side of the plate.
That is the same principle as the box beside the stove: the ground spices are for gravies, the whole ones come out for rice and biryani.
If you are buying one
Most rice cooker marketing is about the number of grain types on the menu. For basmati, three things matter and the rest is decoration.
- A Long Grain White setting, or at least a plain White Rice cycle you can trust. Menus full of quinoa and oatmeal presets change nothing about your rice.
- Fuzzy logic (micom), or nothing at all. A micom cooker reads temperature through the cycle and adjusts, which handles the fact that basmati’s absorption changes with its age. The opposite extreme — a plain one-button cooker — also works well, because it does not try to be clever. It is the middle ground of cheap digital timers that disappoints.
- Capacity in real terms. A “5.5 cup” cooker means 5.5 rice cooker cups of uncooked rice, so about 4 US cups. Buy for how much rice you cook at once, not for the number on the box.
The one worth buying

Two things not to spend on: pressure induction models are superb machines, but pressure pushes rice towards sticky, which is the wrong direction for basmati. And a steamer basket will not cook dal — it will steam vegetables and reheat a cooked dal, but a rice cooker builds no pressure. If you want rice and dal from one machine in one cycle, that is an electric pressure cooker’s job, and if you already own one you may not need a rice cooker at all.

The rice is not the meal
None of this makes rice interesting. It makes it correct, which is a different and more useful thing — correct rice is the quiet half of the plate that lets everything else be loud.
What goes beside it is where the cooking happens: which whole spices went into the fat first, how far the onions were taken, when the ground spices landed.
