What Is Ghee? And Why Indian Cooking Uses It Instead of Butter

Quick answer

Ghee is butter with the water boiled off and the milk solids removed — and, crucially, with those solids allowed to brown before they are strained out.

That last detail is the whole thing. It is also what separates ghee from clarified butter, which is otherwise the same product:

All ghee is clarified butter. Not all clarified butter is ghee.

What you get from removing the water and solids: a fat that takes about 485°F (250°C) before it smokes, against roughly 350°F for butter, and one that keeps for months in a cupboard without refrigeration.


What butter actually is, and what gets taken out

A block of butter is not one substance. It is roughly:

  • 80–82% butterfat — the part you want
  • 16–18% water
  • 1–2% milk solids — milk proteins, including casein, plus milk sugars, including lactose

Heat butter gently and those three parts separate. The water turns to steam and leaves. The solids drop out, first as foam on top and then as sediment on the bottom. What remains between them is clear golden fat.

Stop there, skim, strain, and you have clarified butter.

Keep going, and the sediment on the bottom of the pan begins to toast. It turns from white to pale gold to a proper nut brown, and the smell in the kitchen changes completely — from dairy to something closer to toasted hazelnuts and caramel. Strain now and you have ghee.

Those browned solids never make it into the jar. But they flavour the fat while they cook, and that flavour is what people mean when they say ghee tastes like ghee.

Two of those rows do most of the work.

Water is why butter spits and steams. Put butter in a hot pan and that 16% water has to boil off before anything can brown — which is the hissing. Ghee is dry, so food starts browning immediately.

Milk solids are why butter burns. The fat in butter is perfectly happy at high heat. The milk proteins are not; they scorch, go bitter and turn black long before the fat itself is stressed. Take them out and the same fat goes another 130°F higher.

Why Indian cooking reaches for it

That smoke point is not a technicality here. It is the reason the ingredient exists in this cuisine.

Indian cooking very often begins with a tadka — whole spices dropped into properly hot fat, where they bloom for a matter of seconds. Mustard seeds have to get hot enough to pop. Cumin has to darken and turn nutty without tipping into bitter. That window is measured in seconds and it needs real heat.

Butter cannot go there. It would be black and acrid before the mustard seeds did anything.

There is a second reason, and it is chemistry rather than temperature. A great deal of what spices taste and smell of is fat-soluble, not water-soluble. Those compounds dissolve into hot fat and disperse through the whole dish, which is why a spice bloomed in ghee flavours a curry far more thoroughly than the same spice stirred into water. It is also why black pepper and turmeric together in fat behave differently from either on its own.

And the third reason is simply that ghee tastes of something. Neutral oil is a heat-transfer medium. Ghee is an ingredient. A dal finished with a spoonful of ghee and one finished with a spoonful of sunflower oil are not the same dish.

Is ghee healthy? The honest version

This is where most pages about ghee stop being reliable, so here is the careful answer.

What is straightforwardly true:

  • It contains virtually no lactose or casein. Those live in the milk solids, and the milk solids have been removed. Many people who find butter uncomfortable have no trouble with ghee.
  • It does not break down at cooking temperatures where butter would. A fat that is smoking is a fat that is degrading, and ghee simply does not reach that point in normal cooking.
  • It keeps without refrigeration, which is a genuine practical advantage and the original reason it exists in a hot climate.
  • It contains fat-soluble vitamins A, D, E and K, and short-chain fats including butyrate — carried over from the butter it was made from.

What is oversold:

  • It is not lower in calories or saturated fat than butter. It is higher in both, spoon for spoon, because removing the water concentrates everything else. Around 112–120 calories per tablespoon against roughly 100 for butter, and about 60–65% of its fat is saturated.
  • The vitamin content is real but small in the quantities anyone actually cooks with. Ghee is not a meaningful source of vitamin D in a diet.
  • “Grass-fed” changes the fatty acid profile slightly. It does not turn a fat into a health food.

What this page will not tell you: that ghee cures anything, that you should eat spoonfuls of it daily, or how much of it to consume. Ghee has a long and serious place in Ayurvedic tradition, and that tradition is worth respecting on its own terms — but a page selling you a cooking ingredient is not the place to receive medical advice, and anyone offering you a dose on the internet is guessing.

The sane summary: ghee is a very good cooking fat with a high smoke point and a distinctive taste. Use it because of what it does in a pan. If you are managing cholesterol, heart health or a milk allergy, that is a conversation with your doctor.

Keeping it

Ghee keeps because bacteria need water and there is none left. That is the entire mechanism, and it is why jars sat in Indian pantries for a year long before anyone had a fridge.

  • Cupboard, not fridge. Cool, dark, lid on. Refrigeration does no harm but turns it into a solid brick.
  • Always a dry spoon. This is the only rule that really matters. A damp spoon, or one that has been in the curry, puts water and food into the jar — and water is exactly what you spent an hour removing.
  • It goes rancid, not mouldy. The smell changes from nutty and toasted to sharp, waxy, a bit like old crayons. Your nose is more reliable than the date on the lid.
  • Grainy is normal. Ghee crystallises as it cools and the texture varies with temperature and how it was made. A grainy jar is not a spoiled jar.

What to use it for

High-heat cooking. Tadka, obviously, but also searing, roasting and shallow frying anything that wants a hard brown crust. It behaves like a fat with butter’s flavour and oil’s heat tolerance, which is a genuinely useful combination.

Finishing. A spoonful stirred into cooked dal, or brushed onto a roti as it comes off the heat. The aroma is volatile — cook it and you lose it — so this last-second use is where ghee is most obviously worth it. For a lot of people it is the single thing that makes home cooking taste like the food they grew up with.

Sweets. Halwa, ladoo, mysore pak, barfi. Here ghee is not a cooking fat that could be swapped out, it is the defining flavour, and there is no substitute that produces the same result. Sweets are also where it meets the aromatic spices — cardamom, clove, cinnamon — that behave quite differently in fat than in syrup.

And plenty that is not Indian at all. Roast potatoes, fried eggs, popcorn, searing steak. It is a good fat; it does not have to stay in one cuisine.

Where it is the wrong choice: anything meant to taste fresh and creamy, where you actually want butter’s dairy note — a beurre blanc, most Western baking, butter on toast. Ghee is toasted, not fresh, and it will make itself heard.

Buying it, and what the labels mean

Most supermarket ghee is fine, and the differences below matter less than whether you use it before it goes stale.

  • “Grass-fed” describes the cows’ diet. It shifts the fatty acid profile a little and often deepens the colour. It is not a different product.
  • “Cultured” means the cream was fermented before churning, which is the traditional Indian route and gives a tangier, more complex result. This is the one that tastes most like ghee from an Indian kitchen.
  • “Desi ghee” is the term used across South Asia for the real, traditionally made thing — and it is the word most often stretched by marketing. It is also the label diaspora cooks in the West most often go looking for and cannot find, or cannot trust when they do.
  • Colour and graininess tell you about temperature and method, not quality. Do not read much into either.

If you have been hunting for proper desi ghee and coming up short, the honest answer is that you can make it yourself from ordinary supermarket butter in about half an hour, and it will be better than most of what is on the shelf. The fat is not the flavour

Ghee makes spices work. It does not season anything by itself.

What it does is carry — it gets hot enough to bloom whole spices properly, and it dissolves the compounds that make them taste of something and spreads them through the dish. A curry made with ghee and dull old ground spices is a curry made with dull old ground spices.

Which is the more interesting question, and it is what the spice guides work through one spice at a time: what each one is actually contributing, how to tell fresh from finished, and what the label is not telling you. Get the fat hot. Then get the spices right.

What is ghee?+

Ghee is butter that has been simmered until its water has evaporated and its milk solids have separated out and browned, then strained. What is left is close to pure butterfat — around 99 to 100 per cent fat, against roughly 80 per cent for butter. Removing the water and the solids changes three things at once: it can be heated much hotter without burning, it keeps for months without refrigeration, and it tastes nutty and toasted rather than creamy.

What is the difference between ghee and clarified butter?+

They start the same way and part company at the last step. To make clarified butter you melt butter, let the milk solids sink, and remove them as soon as they separate — the result is pale, clean and fairly neutral. To make ghee you keep the pan on the heat after that point and let those solids toast on the bottom until they are golden brown and smell nutty, and only then strain. That browning is the entire difference, and it is where ghee's flavour and its darker colour come from. All ghee is clarified butter; not all clarified butter is ghee.

Is ghee healthier than butter?+

Not in the way it is usually sold. Ghee is almost pure fat, so spoon for spoon it carries slightly more calories and slightly more saturated fat than butter, not less. What is genuinely true is narrower: it contains virtually no lactose or casein because the milk solids have been removed, and its high smoke point means it does not break down and smoke at temperatures where butter would. Those are real, checkable advantages. Claims that it cures conditions or that you should eat spoonfuls of it daily are not supported, and a fat is still a fat whatever its provenance.

What is the smoke point of ghee?+

Around 485°F, or roughly 250°C, though published figures vary. Butter smokes at about 350°F because its milk solids burn long before the fat itself is in trouble; take those solids out and the fat can go much hotter. That gap is the practical reason Indian cooking reaches for ghee — a tadka blooms whole spices in fat hot enough to make them pop and release their oils in seconds, and butter would be black by then.

Is ghee lactose free?+

It is very low in lactose rather than certifiably free of it. Lactose and casein both live in the milk solids, and making ghee removes those solids, so what remains contains only trace amounts. Many people who cannot comfortably eat butter find ghee no trouble at all. That is not the same as a guarantee: if you have a diagnosed milk allergy rather than lactose intolerance, the residue matters and this is a conversation for your doctor, not a food blog.

Does ghee need to be refrigerated?+

No. Bacteria need water, and ghee has had essentially all of its water boiled off, which is why Indian kitchens have kept it in a jar in the cupboard for centuries. Store it somewhere cool and dark with the lid on. The one rule that matters is a dry spoon — a wet or crumb-covered spoon introduces water and food into the jar, and that is what makes ghee go off. Refrigerating it does no harm but makes it rock hard.

How long does ghee last?+

Unopened and properly made, a year or more at room temperature is normal, and jars are usually dated accordingly. Once opened, several months in a cupboard is unremarkable as long as you keep water out of it. Ghee does eventually go rancid rather than mouldy: it starts to smell sharp, waxy or like old crayons instead of nutty and toasted. Trust your nose over the date.

What is ghee used for?+

Three jobs, mainly. High-heat cooking, because it can take the temperature a tadka needs without burning. Finishing, where a spoonful stirred into a cooked dal or brushed onto a hot roti adds an aroma that was never going to survive being cooked. And Indian sweets, where it is the defining fat and there is no real substitute. It is also simply a good roasting and frying fat for food that has nothing to do with India.
